Bolognese As We Like It …

The perfect bolognese as we like it … recipe with a picture and simple step-by-step instructions.

  • 250 g Organic ground beef
  • 0,5 Italian style salami
  • 1 Carrots
  • 1 Celery stalk
  • 1 Onion
  • 0,5 Leek
  • 2 tbsp Tomato paste concentrated three times
  • 1 tsp Powdered sugar
  • 100 ml Red wine (good quality)
  • 2 Anchovies (anchovies) in oil
  • 500 ml Tomatoes happened
  • 3 Chopped garlic
  • Dried oregano
  • Small chilli pepper
  • Bay leaf fresh
  • Salt
  • Black pepper from the mill
  • 1 Rosemary sprig
  • 250 g Pasta of your choice

Minced meat sauce

  1. Put in the ground beef, sweat it too, do not let it brown.
  2. Onion, carrot, sausage and celery cubes. Cut the leek into slices.
  3. Add the sausage, vegetables and tomato paste and fry a little. Sprinkle with powdered sugar and let it caramelize lightly.
  4. Deglaze with the red wine in portions, reduce a little (approx. 10 minutes).
  5. Add the anchovies and the tomatoes and let simmer slowly (approx. 40 minutes). (I use anchovies as a substitute for broth, it doesn’t taste like fish, I got it from Jamie Oliver)
  6. Cut the chilli into slices and the garlic into small cubes. Add the spices, chilli and garlic and season with salt. Then let it steep again for about half an hour on a low flame.
  7. Remove bay leaf and rosemary sprig before serving.
  8. Taste, done.

Noodles / pasta

  1. Boil water in a large saucepan.
  2. Add plenty of salt, as pasta no longer absorbs salt after cooking.
  3. Prepare according to the manufacturer’s instructions.
  4. Strain and arrange on a deep plate with the sauce. If you like, you can refine it with Parmesan and basil.
