Ingredients for 4 servings:
- 250 g flour (wheat flour)
- 50 g butter
- 175 ml water
- 50 g sugar, or less
- some salt grains
- Oil for frying

Deep-fried butter pastry. Boortsog from Mongolia
Dissolve salt and sugar in warm water. Mix water, butter, and flour and knead into a firm dough. Let it rest for 30 minutes and knead again thoroughly until all the air has escaped. Roll out the dough to about 1 cm thick. Cut out strips, rectangles, and other shapes (2-5 cm wide, 5-10 cm long) and bend or knot them into any shape, e.g., make a lengthwise slit in the middle and pull one end through. Deep-fry the boortsog in hot oil until golden brown. Boortsog is sold as a sweet or snack. Depending on the amount of sugar, it can be spread with butter and honey or topped with cheese.
