Ingredients for 12 servings:

  • 200 g flour
  • 50 g cocoa powder
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 50 g chocolate, grated
  • 2 eggs
  • 150 g crème fraîche
  • 100 g sugar
  • 100 g butter
  • 100 ml red wine
  • Fat for the mold
  • 50 g dark chocolate, melted
  • 50 g crème fraîche

Grease a muffin tin or line with paper baking cups. Preheat the oven to 190°C (top/bottom heat). Combine the flour with the cocoa powder, baking powder, baking soda, and chocolate shavings. Combine the eggs with the crème fraîche, sugar, butter, and red wine and add to the flour mixture. Briefly mix by hand with a whisk or similar until the ingredients are just combined. Mix the crème fraîche with the melted chocolate. Spoon 1 tablespoon of batter into each muffin tin and top with about 1 teaspoon of the chocolate cream. Cover with the remaining batter and bake in the preheated oven for about 25 minutes. The chocolate cream will absorb into the batter slightly during baking, creating a wonderfully moist center. The muffins are already very moist and light.
