Ingredients for 4 servings:
- 4 slices of bacon
- 1 large onion(s)
- 2 cloves garlic
- 500 g beans (kidney beans and white beans mixed)
- ¼ cup beet syrup or maple syrup
- some mustard, sweet
- ¼ tsp ginger powder
- tsp salt and pepper
- ¼ cup ketchup
- some sugar, brown
Instructions
Working time approx. 40 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 40 minutes
Soak the beans in water overnight. Then drain the water and rinse the beans. Return them to the pot and refill with water. Simmer for about 1 hour over moderate heat. Meanwhile, peel and finely chop the onion and garlic. Dice the bacon and fry in a hot pan. Add the onions and garlic and fry until browned, then set aside. When the beans are ready, drain the water and place the beans in an ovenproof dish. Add the bacon, onions, and garlic, along with all the other ingredients (except the salt). Cover the dish and place in the oven. Bake in a preheated oven at 180°C for about 30 minutes. Then remove the lid and cook for a further 30 to 40 minutes. Add more water if necessary. Season to taste and add salt. Serve hot. Goes well with all pan-fried dishes and poultry.
