Ingredients for 1 servings:
- 500 g low-fat curd cheese
- 300 g cream cheese
- 150 g yogurt
- 100 ml milk
- 40 g protein powder (neutral or vanilla)
- 1 tbsp coconut flour
- 1 packet of vanilla pudding powder
- 4 m.-sized eggs
- 150 g xylitol (sugar substitute)
- 150 ml oil
- 400 g apples, e.g. Elstar
Instructions
Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 15 minutes
Preheat the oven to 160°C (top/bottom heat). Peel, core, and slice the apples. Mix all ingredients, except the apples, with a mixer. Pour half of the batter into a greased 26cm springform pan. Arrange the apple slices on top, then spread the remaining batter over the batter. Bake the cake on the middle rack for about 60 minutes until golden brown. Let the pan cool completely before removing the cake.
