Ingredients for 2 servings:
- 2 tomatoes
- 1 onion(s)
- 2 garlic cloves
- 1 pepper, red
- ½ pepper, green
- 100 g feta cheese
- 50 g cheese (kefalotiri)
- 3 tbsp olive oil
- some thyme, dried
- some salt
- some lemon juice

Preheat the oven to 200°C. Grease a small ovenproof dish with oil. Wash and dice the tomatoes, then place them in a bowl. Peel and dice the onions, then add them to the diced tomatoes. Wash the red peppers, slice them lengthwise, remove the seeds, then cut them into small pieces and add them to the bowl. Crumble the feta cheese and add them to the bowl. Peel and crush the garlic, mix everything together, and transfer to the dish. Mix olive oil with lemon juice, salt, and thyme to make a marinade and pour over the mixture in the dish. Wash and deseed the green peppers, cut them into rings, and place them on top of the vegetable mixture in the dish. Finally, grate the kefalotiri over the top, then cover the dish and place in the preheated oven. Bake the bougourdi until the cheese is well melted. Alternatively, the appetizer can also be prepared in aluminum foil. This makes it easier to portion and can then also be grilled. The appetizer can be personalized by adding herbs. Thyme is recommended, but oregano and/or mint are also possible.
