- 750 g potatoes
- 500 ml vegetable broth, preferably double concentrated

Of all the healthy ways to prepare potatoes, this is probably the tastiest.
Peel and slice the potatoes. Arrange all the potato slices in a pan. Pour the boiling vegetable broth over them and simmer on the stovetop, covered, until the broth has evaporated and the potatoes are tender. Be careful: If the broth has evaporated, the potatoes will stick easily! It has a deliciously spicy flavor; you can adjust the spice level by adding the vegetable broth—it’s up to you. It goes perfectly with fish or meat dishes.
