Vitela estufada – Portuguese home cooking

Wash the meat, pat dry, and cut into small cutlets. Season with salt and pepper. Peel the onions and slice them into strips. Wash the tomatoes and dice them. Wash the parsley and finely chop them. Heat 1 tablespoon of oil in a wide pan. Brown the meat in batches briefly on both sides and remove from the pan. Add olive oil to the frying fat, sauté the onions, then add the tomatoes and sauté briefly. Return the meat to the pan and deglaze with about 1/2 liter of water. Add the bay leaves and simmer on low heat with the lid closed for about 1 hour. Add a little more water if necessary. Finally, season the sauce with salt and pepper and sprinkle with chopped parsley. Serve with potatoes or rice and salad. Portuguese cuisine is simple and down-to-earth. I learned this dish from my mother-in-law. It’s usually almost impossible to recreate similar dishes at home. But in this case, I succeeded!
