Braised chicory with bacon and honey

Ingredients for 4 servings:

  • 4 chicory
  • 100 g bacon (rib bacon)
  • 100 ml water
  • salt and pepper
  • 2 tsp honey, strong

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Bacon and honey go perfectly with the bitter chicory

Cut the chicory stalks in half lengthwise so they still hold together. Cut the rib bacon into thin slices or sticks. Fry the bacon slightly in a pan. If the bacon isn’t fatty enough, add another tablespoon of oil. Place the chicory cut-side down in the pan and braise until it has brown marks. Then turn it over, season with salt and pepper. Add the water and braise the chicory over low heat with the pan covered for about 10-15 minutes. Finally, drizzle the honey over the stalks in a thin stream.
