Ingredients for 2 servings:

  • 2 large cucumbers or 1 large pickled cucumber
  • 50 g ham, diced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 5 tbsp vinegar
  • 1 tbsp sugar
  • Pepper, freshly ground
  • ½ bunch Dill, fresh, chopped or a tsp dried

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

low-calorie side dish for meatballs

Peel the cucumbers from the flower to the stem, halve lengthwise, remove the seeds with a spoon, and cut into 1 cm thick slices. Place the cucumbers in a bowl, toss with the salt, and let stand for about 30 minutes. Fry the ham cubes in olive oil, add the cucumbers (reserve the cucumber liquid), and simmer in a covered pan for about 15 minutes. Stir occasionally and gradually add the cucumber liquid. Once the cucumbers are soft, season to taste with vinegar, sugar, and pepper. Finally, bring to a boil briefly and add the dill. Braised cucumbers are particularly delicious with meatballs or meatloaf.
