Ingredients for 1 servings:

  • 50 g couscous
  • ½ tsp vegetable broth
  • 75 ml water
  • 1 tsp olive oil
  • 1 spring onion(s)
  • 1 beefsteak tomato(s)
  • ½ bell pepper(s), yellow
  • 1 tbsp lemon juice
  • Salt
  • pepper
  • ¼ bunch coriander or parsley

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Pour 75 ml of water over the vegetable stock and let the couscous swell for about 5 minutes. Meanwhile, dice the onions, tomatoes, and bell peppers and sauté briefly in olive oil. Add the vegetable mixture to the couscous and season with lemon juice, salt, and pepper. Finally, add the chopped fresh coriander.
