Ingredients for 4 servings:

  • 4 tbsp olive oil
  • 3 cloves garlic, finely chopped
  • 1 chili pepper(s), finely chopped
  • 2 bell peppers, red, fine stripes
  • 2 bell peppers, yellow, fine stripes
  • 1 bell pepper(s), green, fine strips
  • Salt
  • 1 class can/n Tomato(s) (Pizza tomatoes), chopped
  • 100 g Parmesan, coarse shavings
  • 12 black olives, pitted, cut into rings

Instructions

Heat oil in a pan. Add garlic, chili, and strips of bell pepper and season with salt. Sauté for about 3 minutes, stirring frequently. Then, cover and simmer gently in its own juices for about 10 minutes, stirring occasionally. Stir in tomatoes and simmer gently. The peppers should be soft but not mushy. Arrange on a platter and sprinkle with Parmesan shavings and olives. Serve hot with pasta or cold with baguette. This dish requires little seasoning and relies entirely on the natural flavor of the ingredients. Therefore, it’s important to use the best quality vegetables, especially when using vegetables.
