Ingredients for 2 servings:
- 4 tomatoes
- 4 tbsp olive oil
- 2 peppers, pickled
- 3 garlic cloves
- ¼ tsp thyme, dried
- ¼ tsp rosemary, dried
- 1 tbsp Parmesan, fresh, grated
- Salt and pepper, if needed
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Drizzle the tomatoes with oil in a saucepan, add the garlic, chili peppers, thyme, and rosemary, and simmer gently with the lid on for about 20 minutes. Add the Parmesan cheese to the broth and season to taste.
