Ingredients for 4 servings:
- 1 kg offal (turkey hearts)
- 1 onion(s)
- 1 pinch of salt
- 1 pinch(s) of pepper
- some sauce thickener
- 50 g clarified butter
- ½ liter chicken broth
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Halve and wash the turkey hearts, quartering if necessary. Then fry them in hot clarified butter. Once the hearts have browned, add the roughly chopped onions. Season and fry everything thoroughly. Then deglaze with chicken stock and simmer for about 60 minutes. Season to taste and thicken with a sauce thickener. This goes wonderfully with rice and a green salad.
