Ingredients for 4 servings:
- 1 turkey thigh(s) (approx. 1.2 kg)
- salt and pepper
- 75 g smoked, streaky bacon, diced
- 150 ml dry white wine
- 500 g carrot(s), cut into large pieces
- 500 g leek, cut into thick rings
- 750 g potatoes, small with skin, diced
- 1 bay leaf
- 125 ml vegetable stock
- ½ bunch parsley, finely chopped
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 2 hours 15 minutes; Total time approx. 2 hours 30 minutes
Preheat the oven to 180 degrees fan-assisted oven. Rub the turkey thigh well with salt and pepper. Fry the bacon in a roasting pan without fat until crispy. Briefly sear the turkey in it. Deglaze with wine and braise, covered, in the oven for about 2 hours. Add the vegetables to the turkey one hour before the end of the cooking time. Season with salt and pepper. Add the bay leaf and stock and continue braising. Turn the vegetables occasionally. Before serving, season the vegetables with salt and pepper and add the parsley.
