Branding Iron Chili

Ingredients for 8 servings:

  • 1.3 kg minced beef
  • 900 g minced pork
  • 1 liter tomato(s), chopped
  • 3 onions, finely chopped
  • 4 chili peppers (jalapenos), finely chopped
  • 4 tbsp cumin
  • 3 tbsp Tabasco
  • 60 ml whiskey (Sour Mash Whiskey, Jack Daniels)
  • 500 ml beer, mild
  • 2 tsp salt
  • 1 tube(s) Tomato paste
  • ½ tsp all-spice
  • 5 garlic cloves, finely chopped
  • 2 bell peppers, diced
  • 750 ml tomato(s), pureed
  • Oil (peanut oil)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Heat the oil in a large pot. Sauté the meat, onions, garlic, and bell peppers until the meat is crumbly and the onions are translucent. Transfer everything from the pot to another container and slowly bring the whiskey and beer to a boil in the pot. Return the meat and other ingredients to the pot and add the crushed and diced tomatoes, tomato paste, jalapenos, and all the spices except 1 teaspoon of cumin. Then reduce the heat and simmer for 1.5 hours, stirring occasionally. Finally, stir in the remaining cumin and serve.
