Bratwurst hash brown with gnocchi, egg and vegetables

Ingredients for 4 servings:

  • 1 kg gnocchi (pan gnocchi)
  • 8 sausages, fresh
  • 1 zucchini
  • 1 eggplant(s)
  • 200 g cocktail tomatoes
  • some olive oil
  • some rapeseed oil
  • some salt and pepper
  • some parsley
  • 4 eggs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

With fried egg on top

Cut the sausages into small pieces and fry them in a little rapeseed oil in a stainless steel pan until crispy all over. Meanwhile, fry the gnocchi in a little olive oil in a non-stick pan until crispy, then keep them warm in an ovenproof casserole dish in the oven. Chop the zucchini and eggplant and fry them briefly in the non-stick pan with a little olive oil. Add the vegetables, cocktail tomatoes, and sausage to the gnocchi and keep them warm. Now fry the fried eggs in the non-stick pan until tender and place them on top of the sausage rosti. Season with salt and pepper, if desired, and sprinkle with parsley.
