Fried potatoes with bacon, beans, feta and egg

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 onion(s)
  • 150 g feta cheese
  • 20 g parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika powder, hot
  • 2 tsp oregano
  • 1 tsp marjoram
  • 1 tsp thyme
  • 1 tsp nutmeg
  • 1 tsp cayenne pepper
  • 100 g butter
  • 150 g bacon cubes
  • 2 garlic cloves
  • 1 can beans, 660 g drained weight
  • 8 eggs

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 45 minutes; Total time approx. 3 hours 45 minutes

Boil the potatoes for 20-30 minutes until tender. Then rinse with cold water, peel, and let cool. When the potatoes are cold, slice them. Meanwhile, dice the onions and feta, and finely chop the parsley. Mix the seasonings together. Heat the butter in batches in a pan, fry the potatoes in batches, and keep warm in a pot. Stir in a little of the mixed seasoning each time you fry the next batch. Add the bacon and onions to the pan, press in the garlic, and sweat. Heat the beans in another pan. Now add everything to the pot with the fried potatoes and mix in the parsley and feta. Make fried eggs from the eggs and serve everything together.
