Ingredients for 1 servings:

  • 300 g rye flour
  • 700 g spelt flour or wheat flour
  • 800 ml water, lukewarm
  • 10 g yeast
  • 20 g salt
  • 2 tbsp bread spice mix or caraway seeds
  • 2 kg Mett (bratwurst mince)
  • 3 m.-sized onion(s), in rings
  • 5 tbsp mustard
  • 500 g cream cheese, natural
  • 50 g horseradish
  • Decoration, e.g. pickles, radishes, cocktail tomatoes

Working time approx. 1 hour; Rest time approx. 1 day 3 hours 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 day 5 hours 30 minutes

Bake the bread the day before: Combine 200g of water, yeast, and a little flour, cover, and let rise in a warm place for 2 hours. Knead the remaining water and flour into the dough along with the spices and let rise for another 1.5 hours. Line a springform pan with baking paper and bake the dough in it at 240°C on medium heat for 10 minutes. Then reduce the temperature to 200°C and bake for another 45-50 minutes. Remove the bread from the springform pan and baking paper and let it cool on a wire rack. Store the cooled bread in an airtight container overnight. For the cake: The top of the bread will have probably lifted off during baking—almost like a mushroom cap. Cut this off and set it aside. Similar to a sponge cake, cut the remaining “cylinder” into three equal layers. Now you can layer the cake. This is easily done in a cake ring or the ring of the springform pan. Spread a thin layer of mustard on the top of the three layers and place it in the bottom of the ring. Spread half of the sausage mince and onions on top and press firmly with your hands. Then repeat with the middle layer and the other half of the mince and onions. Cut the third layer into 16 slices. Spread each slice with mustard on the soft side and place them crust-side up in the ring. Remove the ring and cut the cake. Mix the cream cheese and horseradish together and spread it all over the cake. Decorate as desired and refrigerate until ready to serve. Tip: Don’t forget toothpicks and chewing gum!
