Ingredients for 1 servings:

  • 150 g spelt flour, wholemeal
  • 100 g wholemeal rye flour
  • 125 g whole wheat flour
  • 125 g wheat flour (type 405)
  • 1 packet of dry yeast
  • ½ tsp, leveled sugar
  • ½ tsp salt
  • 2 tsp bread spice mix
  • 4 tbsp olive oil
  • 375 ml water, warm
  • possibly kernels or linseed

Instructions

Working time approx. 10 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

Stir the yeast into the flour with a spoon. Add the water, sugar, salt, and bread spice, then knead everything together. If desired, you can also add a few sunflower or pumpkin seeds or flaxseeds to the dough. Cover and let rise for 25 minutes at just under 50°C. Then knead briefly and pour into a loaf pan. Let rise for another 15 minutes. Bake in a preheated oven at 200°C (top/bottom heat) for 25-30 minutes.
