Bread baked in the air fryer

Ingredients for 1 servings:

  • 3 eggs
  • 250 g low-fat curd cheese
  • 1 ½ tsp salt
  • n. B. Bread spice mix
  • 100 g spelt flour, possibly more
  • 70 g psyllium or flaxseed
  • 30 g poppy seeds
  • 30 g green spelt meal, wheat meal or oat meal
  • 1 ½ tsp ammonium bicarbonate
  • 1 tsp honey
  • 1 tsp vinegar, feel free to try different flavors
  • 50 g sunflower seeds
  • n. B. water

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 15 minutes

with quark, eggs, spelt, green spelt, psyllium

Combine all ingredients one after the other in a medium bowl. This can also be done with an electric whisk fitted with a dough hook. When the mixture is fluffy, remove it from the bowl and knead again. You can add more water or flour as needed, but it should still be slightly sticky. Form an even loaf and bake in the air fryer at 165°C for 50 minutes. Tip: Check the bread occasionally and brush it with water. It should be dark, but not black. The bread is done when you hear a hollow sound when you tap the bottom. Otherwise, bake it a little longer. I created this recipe for the air fryer, but you can also bake it in the oven at 180°C.
