Bread dumplings

Ingredients for 4 servings:

  • 10 day-old rolls, plain, without seeds
  • 100 g bacon, streaky, diced
  • 3 onions
  • 1 bunch parsley, finely chopped
  • 2 tbsp butter
  • 400 ml milk
  • 3 eggs
  • Salt
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

as a perfect accompaniment to mushrooms in white wine

Cut the rolls into thin slices and place in a large bowl. Fry the bacon and onions in butter, then stir them into the pan with the parsley after about 5 minutes. Let them cool slightly and add them to the rolls. Then warm the milk (not too hot!) and pour it evenly over the bread mixture. Mix well and let it stand for about 30 minutes. Whisk the eggs with salt, pepper, and nutmeg, then lightly knead them into the dumpling dough. Shape the mixture into dumplings about 6 cm in diameter and simmer in hot water for about 8 minutes (do not boil, or they will fall apart!).
