Ingredients for 3 servings:

  • 1 pack of stale bread rolls, diced (dumpling bread, approx. 200 – 250 g)
  • 2 eggs
  • 200 ml milk
  • 1 onion(s)
  • 1 tbsp flour
  • 1 bunch of parsley
  • salt and pepper
  • olive oil
  • salt water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the dumpling bread in a bowl. Crack the two eggs into a coffee mug and mix. Pour in the milk (if you use a regular coffee mug, you don’t need to measure the milk). Pour the milk and egg mixture over the dumpling bread and stir. Finely chop the onion and sauté it in a pan with a little olive oil. Wash and chop the parsley. Add the parsley and onion to the dumpling bread and knead everything together. Season with salt and pepper and add the flour, mixing the dumpling bread thoroughly. Form the mixture into dumplings (this works best if you repeatedly run your hands under cold water). Then boil the dumplings in salted water for about 15 minutes.
