  • 250 g Wheat flour type 1050
  • 500 g Wheat flour type 450
  • 1 Tl Ground caraway
  • 1 Tl Fennel, ground
  • 1 Tl Ground coriander
  • 12 g Dry yeast
  • 1 Heaped teaspoon of salt
  • 1 Pinch of sugar
  • 250 ml Lukewarm milk
  1. Put the flour with the spices in a bowl and mix, add the yeast with a pinch of sugar and pour the lukewarm milk on the yeast. Then knead everything with the dough hook for about 8 minutes.
  2. Then place the bowl in the oven preheated to 40 degrees and let it rise. The volume must have increased significantly. Then shape the bread, dust it with flour and let it rise again.
  3. Put a bowl of boiling water in the oven. Also sprinkle the bread with water every now and then.
  4. Then bake at 220 degrees for about 15 minutes, lower to 180 degrees and bake for another 40 minutes.
