Bread / Rolls: Mares with Fiber

The perfect bread / rolls: mares with fiber recipe with a picture and simple step-by-step instructions.

  • 0,5 dice Yeast fresh
  • 200 g Spelled flour
  • 200 g Wheat flour type 550
  • 50 g Flaxseed meal
  • 25 g Wheat bran
  • 50 g Oatmeal, delicate as a blossom
  • 16 g Baking malt
  • 14 g Salt
  • 3 tablespoon Sunflower oil
  • Water
  1. Dissolve the yeast in a little lukewarm water. Weigh types of flour as well as flaxseed meal, wheat bran, oat flakes and baking malt. Add salt and mix everything well.
  2. Now pour in the oil and stir in with the dough hook.
  3. Add water drop by drop and stir firmly. A smooth dough must be created that loosens from the edge of the bowl.
  4. Now knead this dough for 10 minutes until it is as soft as a child’s bottom. Then cover and let rise until it doubles in volume.
  5. Now cut the dough into three parts, roll “sausages” and use them to make a plait.
  6. Line a bread pan with foil, put the braid in it, cover with a warm, damp cloth and let rise for another hour. Then spray or brush with salt water.
  7. Preheat the pipe to 260 degrees and slide an empty baking sheet onto the bottom rail.
  8. Immediately after the bread is in the oven, pour COLD water onto the hot sheet and lock the door IMMEDIATtbspY. Turn the temperature back to 220 degrees and bake the bread for about 40 minutes until golden.
  9. TIP Halfway through the baking time, I took the bread out of the mold and put it in the oven. So it got nice brown and crispy on the sides too.
