Bread soup

Ingredients for 4 servings:

  • 250 g wholemeal bread
  • 1 bunch of soup greens, chopped
  • 1 large onion(s), finely diced
  • 30 g lard
  • 1 liter meat broth
  • Salt
  • marjoram
  • 1 egg yolk
  • 1 bunch parsley, chopped
  • 3 tbsp sweet cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Crumble the bread and soak. Fry the finely diced onion and finely chopped vegetables in hot fat. Squeeze the bread well and add it to the pan, stirring well. Add the hot broth, simmer for about 30 minutes, and then strain through a sieve. Season with salt and marjoram, bring back to a boil briefly, then remove from the heat. Whisk together the cream and egg yolk and stir into the soup. Sprinkle with parsley.
