Ingredients for 4 servings:

  • 150 g breadcrumbs
  • 100 g butter
  • 1 onion(s)
  • 4 eggs
  • 2 tbsp flat-leaf parsley, chopped
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

as a soup garnish or filling side dish

For the dumplings, peel the onion and dice very finely. Place it in a small bowl with a teaspoon of butter, cover, and microwave at 600 watts for about two minutes. The diced onions should be nice and translucent. Melt the remaining butter, but do not let it get too hot. In a bowl, mix the breadcrumbs with the butter, diced onion, eggs, and parsley well. This works best with a fork. Season with salt, pepper, and nutmeg. Let the mixture rest for about 10 minutes. Bring salted water to a boil, then use wet hands to form eight dumplings from the crumb mixture, cover, and let simmer over medium heat for about 15 minutes. To add to the soup, form smaller dumplings and let them simmer in the soup for 10 minutes until cooked through.
