Breaded feta schnitzel on a colorful salad

Ingredients for 3 servings:

  • 1 romaine lettuce
  • 1 onion(s)
  • 1 bell pepper(s), yellow
  • ½ cucumber(s)
  • 3 tbsp lemon juice
  • salt and pepper
  • 5 tbsp oil
  • 2 tbsp tomato ketchup
  • 2 tbsp mayonnaise, salad
  • 3 packs of feta cheese
  • 1 egg(s)
  • 50 g breadcrumbs
  • 2 tbsp flour

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wash the lettuce, shake dry, and cut into pieces. Peel, halve, and slice the onion. Clean, wash, and slice the bell pepper. Wash the cucumber, quarter it lengthwise, and slice it into pieces. Season 2 tablespoons of lemon juice with salt and pepper. Stir in 3 tablespoons of oil. Mix the prepared salad ingredients and vinaigrette. Let the salad stand. Mix together the ketchup, mayonnaise, and 1 tablespoon of lemon juice. Season. Coat the feta first in egg, then in flour, and finally in breadcrumbs. Heat 2 tablespoons of oil in a pan. Fry the feta schnitzel, turning frequently, until golden brown. Place the salad on a plate. Arrange the feta schnitzel on top. Serve with the sauce. Baguette goes well with the salad.
