Ingredients for 2 servings:
- 2 salmon fillets
- Flour
- 1 egg(s)
- breadcrumbs
- 1 mango(s)
- 1 onion(s)
- 2 tbsp crème fraîche
- 125 ml chicken stock
- 2 tbsp lemon juice
- salt and pepper
- curry powder
- Oil for frying
- Butter for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Season the salmon with salt and pepper. Coat first in flour, then in beaten egg, then in breadcrumbs, and fry in oil. For the curry sauce, peel and dice the onion and mango. Fry the onion in butter, add the mango cubes, and dust with curry powder. Pour in the lemon juice and chicken stock, stir in the crème fraîche, and blend with a hand blender. Season to taste with salt and pepper.
