Salmon fillets with fruity mango sauce

Ingredients for 4 servings:

  • 500 g salmon fillet(s)
  • 200 g rice
  • salt and pepper
  • 2 mangoes
  • 4 tsp olive oil
  • 2 limes
  • 4 oranges
  • 1 sprig of basil
  • 1 spring onion(s)
  • ½ fat for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Wash the salmon fillets and pat dry. Squeeze the limes. Drizzle the fillets with lime juice and olive oil and let stand for 15 minutes. Cook the rice in salted water according to the package instructions. Meanwhile, peel the mangoes and cut the flesh into small cubes. Squeeze the oranges. Season the salmon fillets with salt and pepper. Heat a little fat or oil in a pan and fry the fillets, skin-side down, for 5 minutes, then turn them over and fry for another 5 minutes. Wash the basil, shake dry, and pick off the leaves. Wash and trim the spring onions, then cut them into very fine strips. Heat the orange juice in a saucepan, add the mangoes, purée everything finely, and season with salt and pepper. Serve the salmon fillets with the mango sauce and rice on plates. Garnish with spring onions and basil. Enjoy!
