Ingredients for 2 servings:

  • 2 small zucchini
  • 1 egg(s)
  • 5 tbsp flour
  • 10 tbsp breadcrumbs
  • salt and pepper
  • 1 pinch(s) paprika powder

Instructions

Wash the zucchini and pat dry, then cut into slices about 1 cm thick. Bread these like a schnitzel. To do this, first coat them in flour, then in a mixture of beaten egg and the spices, and finally in breadcrumbs. Fry the breaded zucchini in a pan with neutral oil, such as sunflower oil, over medium heat until golden brown on both sides. Serve hot. Fruity dipping sauces go well with them. Delicious as a side dish with meatballs, grilled food, corn on the cob, or as an appetizer or small snack, and a welcome change of pace to use up your garden’s zucchini.
