Cucumber soup with fresh bratwurst

Ingredients for 4 servings:

  • 500 g bratwurst, fresh
  • 2 cucumbers
  • ½ cup sour cream or crème fraîche
  • 2 tsp mustard, more to taste
  • 2 tsp vegetable broth or meat broth
  • salt and pepper
  • ½ bunch of dill
  • oil

Cut fresh sausages into small pieces/balls (best done with the back of a knife) and fry them in a pan with plenty of oil. Remove the sausages from the pan. Peel the cucumbers and halve them lengthwise. Scrape out the seeds with a spoon and cut the cucumber into thumb-thick slices. Fry these in the same pan and season with salt and pepper. After a few minutes, cover completely with water, stir in the vegetable stock and mustard, and simmer for about 10 minutes, until the cucumbers are soft. Add the sausages and crème fraîche and heat through. Just before serving, add fresh, finely chopped dill. Serve with fresh white bread or baguette.
