- 90 g Wholemeal spelt flour
- 1 pinch Salt
- 200 ml Vegetable milk
- 1 Pc. Egg
- 150 g Raspberries
- 125 g Greek yogurt or curd cheese
- 1 tsp Maple syrup
- Oil for frying
Instructions
- Whisk the ingredients for the dough together. For the filling, lightly puree the raspberries with the Greek yoghurt and maple syrup. You can still see bits of raspberry.
- Heat the oil in a pan and pour a thin layer of batter into it. Spread by swirling and bake over medium heat until bubbles form on the surface after approx. 1 minute. Turn and briefly finish baking. Place on a plate and spread the raspberry filling and fold or roll up roughly. Do the same with the rest of the dough.
