Ingredients for 1 servings:

  • 1 vanilla pod(s), scraped out pulp
  • 3 egg yolks
  • 90 g sugar
  • 125 g butter, soft
  • ½ tsp sea salt
  • 1 tsp baking powder
  • 225 g flour
  • 1 egg(s)
  • 3 tbsp sugar, coarse (granulated sugar)

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Makes about 50 cookies that taste good in any season

Beat the egg yolks with vanilla seeds, sugar, and salt until very fluffy. Gradually beat in the softened butter. Mix in the flour and baking powder and knead everything into a smooth dough. Shape into round logs and chill for two hours. Cut the firm dough logs into 1/2 cm thick slices and place on two baking sheets lined with baking paper. Mix the whole egg with 1 tablespoon of water and brush thickly over the cookies. Then score the surface in a grid pattern with a knife and sprinkle with sugar. Preheat the oven to 180°C (or 160°C fan-assisted oven) and bake the cookies for about 12 minutes until golden brown.
