Ingredients for 4 servings:

  • 200 g spelt flour type 1050
  • ½ tsp salt
  • 1 tbsp sunflower oil
  • 125 ml water
  • 100 g sour cream or crème fraîche
  • some pepper, freshly ground
  • some salt
  • 150g Gorgonzola
  • 1 onion(s), red
  • 90 g raw ham, thinly sliced
  • 200 g fig(s), sliced
  • 2 tbsp parsley

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes

For the tarte flambée dough, knead the flour, salt, oil, and water with a mixer until it forms a smooth dough, no longer sticking. Add a little more flour if needed. Then let the dough rest for about 30 minutes. For the sauce, season the sour cream with salt and pepper and spread it over the rolled-out tarte flambée dough. For the topping, finely chop the Gorgonzola and spread it over the tarte flambée in fine crumbs. Then top the tarte flambée with the sliced ​​onions, ham slices, and fig slices. Bake at approximately 220°C (top/bottom heat) for about 15 minutes on the lowest rack of a preheated oven. The tarte flambée also tastes great on a pizza stone. Sprinkle with coarsely chopped parsley before serving. 600 kcal per serving
