Broad beans in bacon sauce

Ingredients for 3 servings:

  • 500 g broad beans
  • 200 g bacon, streaky
  • 1 onion(s)
  • a few stalks of savory
  • 2 tbsp flour
  • salt and pepper
  • 1 tbsp vinegar
  • some sugar to taste

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

that’s how my mother did it

Wash and trim the beans, and break them into smaller pieces. Cook them with the savory in about 500 ml of well-salted water. Drain the beans, reserving the cooking water. Cut the bacon into small cubes and fry in a saucepan (if the bacon is very lean, add a little more butter). Add the bacon rind to the cooking water. Peel and dice the onion and fry in the bacon fat until golden brown. Sprinkle the flour over the beans, sweat, and gradually cook into a roux, stirring in the cooking water. Season the sauce generously with pepper and salt and season to taste with vinegar and sugar. Add the beans to the sauce and let it simmer for a few minutes. Boiled potatoes go very well with this.
