Ingredients for 4 servings:
- 2 mango(s), peeled, flesh cut into fine strips
- 2 carrots, peeled, cut into fine strips
- 1 cucumber(s), unpeeled, halved, core removed, cut into thin slices
- 2 spring onions, cut into fine rings
- 2 bunch coriander, leaves picked
- 2 tomatoes, cut into large pieces
- 4 chili peppers, fresh, red, cut into very fine rings
- 2 organic limes, cut into very fine slices
- 2 tbsp fish sauce
- 4 tbsp soy sauce, dark
- Sea salt
- 120 g peanuts, roasted

Very spicy
Mix mangoes, carrots, cucumber, spring onions, coriander, tomatoes, chilies, and limes in a salad bowl. Season with fish sauce, soy sauce, and sea salt, and serve sprinkled with peanuts.
