Ingredients for 4 servings:

  • 2 mango(s), peeled, flesh cut into fine strips
  • 2 carrots, peeled, cut into fine strips
  • 1 cucumber(s), unpeeled, halved, core removed, cut into thin slices
  • 2 spring onions, cut into fine rings
  • 2 bunch coriander, leaves picked
  • 2 tomatoes, cut into large pieces
  • 4 chili peppers, fresh, red, cut into very fine rings
  • 2 organic limes, cut into very fine slices
  • 2 tbsp fish sauce
  • 4 tbsp soy sauce, dark
  • Sea salt
  • 120 g peanuts, roasted

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Very spicy

Mix mangoes, carrots, cucumber, spring onions, coriander, tomatoes, chilies, and limes in a salad bowl. Season with fish sauce, soy sauce, and sea salt, and serve sprinkled with peanuts.
