Broccoli and cheese croquettes

Ingredients for 4 servings:

  • 500 g broccoli
  • 200 g Emmental cheese, grated
  • 2 eggs
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Low carb, makes about 15 pieces

Cook the broccoli in salted water until very soft. Drain, let cool slightly, cut into very small pieces, and place in a bowl. Add the cheese and two eggs, mix well, and season with salt and pepper. If desired, add additional seasonings of your choice. Shape the mixture into approximately 15 croquettes (caution: the dough will be soft) and place on a baking sheet. Bake in a preheated oven at 200°C (convection oven).
