Vegetarian low-carb pizza

Ingredients for 1 servings:

  • 1 cauliflower, approx. 1 kg
  • 8 large eggs
  • 800 g cheese, grated
  • 4 cups of crème fraîche
  • 2 large onions
  • 3 bell peppers
  • some salt and pepper
  • Grease for the tray

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

with cauliflower base

For the base, clean and finely grate the raw cauliflower. Then mix the grated cauliflower with the eggs and 400g of the grated cheese. Spread this mixture evenly on a greased baking sheet. Bake the base in a preheated oven at 180°C (top/bottom heat) or 160°C (fan oven) for 25 minutes. Meanwhile, for the topping, clean and dice the onions and bell peppers. Then mix with the crème fraîche and the remaining cheese. Season the mixture with salt and pepper. Spread the topping over the pre-baked base and bake the pizza for another 15 minutes. Tip: If you don’t want a vegetarian pizza, scatter diced ham over the pizza before continuing to bake.
