Broccoli and coconut soup

Ingredients for 2 servings:

  • 1 tbsp oil for frying
  • 1 small onion(s)
  • 500 g broccoli, frozen or fresh
  • 1 liter vegetable broth
  • 200 ml coconut milk

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Roughly chop the onion and fry it in oil. If using fresh broccoli, divide the head into florets and peel the stalk. Briefly fry the vegetables. Pour in the vegetable stock and coconut milk and simmer until the broccoli is tender. Purée the soup.
