Super low-fat tomato soup

Ingredients for 4 servings:

  • 2 kg tomatoes (preferably vine tomatoes)
  • 1 onion(s), red
  • 1 tbsp olive oil
  • Salt
  • Sugar or liquid sweetener

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the tomatoes. Dice the onion and fry in olive oil. Add salt and sweetener. Chop the peeled tomatoes into pieces over the pan with the fried onions, removing and discarding the stems (over the pan to catch the juices and not lose them), and let it simmer. After about 10 minutes, blend thoroughly with an immersion blender until everything is finely pureed. Finally, season to taste. This makes a great low-fat tomato sauce for pasta or can be served hot or cold as a soup. You can also refine the soup with cream.
