Broccoli and minced meat pan with ginger and almonds

Ingredients for 1 servings:

  • 200 g minced beef
  • 1 tsp red curry paste
  • ½ tsp salt
  • ½ tsp coriander powder
  • 1 head of broccoli
  • 2 cm ginger root
  • 4 tomatoes, dried
  • 1 tbsp almond butter, coarse
  • 1 tbsp lemon juice or apple cider vinegar
  • 150 ml water

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Brown the minced meat in a wok with salt, coriander, and red curry paste. Wash the broccoli, cut into small florets, and add to the pan. Cover and cook on high heat for about 10 minutes, stirring occasionally. The broccoli can be fried a little. Peel the ginger and finely dice. Slice the sun-dried tomatoes. Add the ginger, sun-dried tomatoes, coarse almond butter, lemon juice or apple cider vinegar, and water to the pan and mix well. Season to taste and serve.
