Beef steaks on the pasture

Ingredients for 1 servings:

  • 75 g arugula
  • 2 tomatoes
  • salt and pepper
  • 60 g butter
  • 4 eggs
  • 1 tbsp chives
  • 2 minute steak(s) of beef
  • 1 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Spread all the arugula on a flat plate, which will then be eaten from. Cut the tomatoes into small pieces and arrange them over the arugula. Season both lightly with salt and pepper. Melt some of the butter in a pan. Crack the eggs into the pan and fry slowly until fried. When the eggs have set slightly, add salt and sprinkle with chives. Heat another pan. Season the minute steaks generously with salt and pepper on both sides. Add the olive oil to the hot pan. Then fry the minute steaks for one minute on one side. After one minute, turn the steaks over. Drizzle some butter on the turned steaks. Melt this butter in the hot pan. Spoon the melted butter over the arugula and tomatoes, and over the minute steaks. After a total of 2 minutes of frying time—1 minute on one side and 1 minute on the other side—place the steaks on the plate with the arugula and tomatoes. Place the fried eggs on the minute steaks and add any fat and butter from the pan to the plate.
