Ingredients for 2 servings:
- 200 g broccoli
- 250 g cheese, spicy butter cheese
- 2 eggs
- ½ liter of milk
- ½ tsp salt and pepper
- 6 slice(s) bread(s) (wholemeal bread)
- ⅛ liter of beer
- 20 g butter, in flakes

Broccoli, cheese and black bread
Clean the broccoli, cut it into small florets, and boil it in lightly salted water for 3 minutes, then rinse it with cold water. Dice the cheese and bread and separate the eggs. Whisk together the egg yolks, milk, salt, and pepper. Add 3/4 of the bread to the egg wash and let it sit for 30 minutes. Add the beer, cheese cubes, and broccoli. Beat the egg whites until stiff, fold them into the mixture, and pour into a baking dish. Distribute the remaining bread cubes and butter flakes over the casserole. Bake in a preheated oven at 175°C for 20-30 minutes. The casserole is ready when a wooden toothpick comes out clean. If you like mountain cheese, you can use that too. I’ve heard of the recipe using Wörishofener cheese, but it doesn’t seem to be available anymore.
