Broccoli cream

Ingredients for 3 servings:

  • 500 g broccoli, fresh or frozen
  • 1 cup sour cream or creme fraiche (200g)
  • some herbal salt, if desired

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

delicious with gnocchi, potatoes or pasta

Steam the broccoli or boil it in a little water; it’s okay if it gets a little soft. After cooking, drain it, place it in a tall blender, add a pinch of herb salt, and the cup of sour cream/creme fraiche. Purée with a hand blender until it forms a cream. Done. It also tastes delicious with herb crème fraîche. I usually serve this cream with lightly fried gnocchi, but it’s also great with potatoes or pasta. You can also eat it cold on bread (really!).
