Broccoli cream soup

Ingredients for 3 servings:

  • 500 g broccoli
  • 40 g butter
  • 6 tbsp flour
  • 400 ml vegetable stock
  • 300 ml milk
  • nutmeg
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, cook the broccoli until al dente. Then, melt the butter in a saucepan and add the flour. Gradually add the broth and milk, stirring constantly. Be careful not to let the butter and flour mixture stick to the bottom of the pot. Bring the soup to a boil occasionally to check the consistency. Continue adding milk and broth until the desired consistency is reached. Then add the broccoli and puree. Finally, season the soup with nutmeg and salt. If you like, you can also remove some of the broccoli after cooking and add it after puréeing. This will give the soup a bit more “bite.”
