Broccoli Parmesan Balls

Ingredients for 4 servings:

  • 1 head of broccoli
  • 100 g ground almonds
  • 100 g Parmesan, grated
  • 1 clove(s) garlic
  • 1 egg(s)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Roughly chop the broccoli and boil in salted water for about five minutes. Roughly chop it in a blender along with the garlic. Be careful not to puree it. Mix the mixture with the remaining ingredients and form into small balls with your hands. Squeeze out any excess liquid. Place the balls on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C for about 20 minutes.
