Broccoli Pesto
The perfect broccoli pesto recipe with a picture and simple step-by-step instructions.
- 400 g Pasta of your choice
- 250 g Broccoli florets
- 1 Peeled garlic clove
- 1 size Lemon
- 0,5 tsp Chilli flakes
- 3 tbsp Pine nuts
- 5 tbsp Extra virgin olive oil
- 3 tbsp Grana Padano Parmesan, grated
- Salt and freshly ground pepper
- Cook the pasta al dente according to the instructions on the packet.
- In the meantime, bring another pot of water to the boil and cook the broccoli in it for about 4 minutes. Drain, return to the pot and mash with a fork. Finely chop the garlic and lemon peel and combine with the chilli flakes and Mix the pine nuts with the broccoli, halve the lemon and set aside.
- Drain the pasta and put it back in the saucepan. Mix with the broccoli pesto and squeeze half a lemon over it. Transfer the olive oil and season with plenty of salt and pepper. Add the grated Parmesan, mix the pasta well and serve
