Broccoli salad (raw)

Ingredients for 4 servings:

  • 500 g broccoli
  • 1 onion(s), red
  • 75 g bacon, sliced
  • 3 tbsp walnuts, crushed
  • 4 tbsp raisins
  • 2 tbsp Balsamic vinegar, white
  • 6 tbsp mayonnaise
  • 2 tbsp yogurt
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 10 hours; Total time approx. 10 hours 30 minutes

Tear the broccoli into small florets. Remove the stalks. Finely chop the onions. Chop the raisins with a cleaver, as well as the walnuts. Mix everything in a bowl. Mix the remaining ingredients into a dressing, season with salt and pepper, and toss with the broccoli. Let the salad marinate overnight. Heat a pan without fat and fry the bacon until crispy. Drain on kitchen paper and let cool. Arrange the salad on plates and only then crumble the bacon over it. Tip: If you don’t have walnuts on hand, sunflower seeds also taste very good. I use Miracle Whip Light a little more sparingly and instead add more yogurt with a touch of sugar.
