Ingredients for 2 servings:
- 3 tbsp brown rice
- 600 ml vegetable stock
- 160 g broccoli, cleaned
- Salt
- pepper
- 1 pinch of nutmeg
- 1 tbsp parsley, chopped
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
particularly low in fat and yet filling
Cover the rice and simmer in the vegetable broth for about 25 minutes. Add the broccoli during the last 15 minutes and cook until soft. Then puree the mixture in a blender and season with spices. Sprinkle with parsley before serving.
